Alfreton Women's Institute October Meeting
Nearly thirty ladies attended the October meeting of the relaunched Alfreton Women’s Institute. Vanda Lilja and Jen Reeks hosted the evening and a new committee member, Jayne Campbell, was welcomed.
A minute’s silence was observed for Margaret Watson who will be greatly missed.
The highlight of the gathering was a cookery demonstration by Kathy Cook, who is, among many other things, President of Heage WI. Kathy is part of two teams who cook at the Community Kitchen in Clay Cross for something called ‘The Snap Tin’. Sixty people regularly enjoy a tasty, nourishing, two course meal conjured up by Kathy and the teams from the most unlikely sets of ingredients. For some time the Community Kitchen used unexpected ingredients delivered from a central scheme which prevents food wastage. Great ingenuity has been needed to conjure up something palatable from such disparate materials. Kathy shared three of her creations with us, demonstrating the methods, and cooking them for us to sample.
One of the dishes used up sliced bread – a Savoury Bread and Butter Pudding – which was very tasty and could accommodate whatever was available. On another occasion the teams were presented with many Madeira Cakes and jars of Mincemeat, which were layered to make a surprising pleasant pudding or cake. The third recipe was for a Lemon Curd Pudding which was utterly delicious.
Some cooks have a magic in their hands which can combine whatever they are given to use into something palatable and even more-ish. Kathy can invent something out of whatever random ingredients are available and produce a delightful, tasty and nutritious meal. ‘The Snap Tin’ and the denizens of Clay Cross are lucky to have her.
The next meeting will be at The Wesley Church on Ellesmere Avenue, Alfreton at 7-30 pm on 28th November, when the speaker will be Paul Newsham, a forensic expert.
